He likes to use produce from his own vegetable garden to bring his creations to life. Intensity is his guiding principle: a grilled sandwich filled with game stew, for instance, makes for an original accompaniment to a medium-rare roe fillet, an exquisite game jus and a cream sauce with chanterelles.
