Rogier van Dam's dishes are full of character, and nothing on the plate is superfluous. If he serves up a fillet of venison, the whole dish revolves around that ingredient. Naturally, there is also a focus on sauces and creative garnishes. The dessert of brioche stuffed with creamy Époisses is a classic of the house, and rightly so!
