Het Seminar is an ode to nature that adopts "farm to fork" as its guiding principle. A former monastery, this upscale restaurant stands in its own grounds. From fruit and vegetables to livestock, everything is grown or reared on site – the focus is on sustainability. The chef invites you to create your own set menu from an array of classic-style dishes that showcase bold flavours and the freshest ingredients. For example, he expertly pan-fries duck breast to a rosy pink, elevating it with a lemongrass-infused duck jus; this is served with vegetable accompaniments such as broad beans and caramelised onion, which provides a touch of sweetness. At Het Seminar, the fertility of the Dutch soil speaks for itself.

"We grow our own organic vegetables, herbs and fruit without using pesticides, and base what we cook on what our garden can provide. Our goal is to create a "from-soil-to-mouth" experience, striving for maximum self-sufficiency. We rear our own pigs, chickens and cows. Animal welfare is a matter of high priority here. We craft various dairy products including our own cheeses."
