Nolla means ‘Zero’ and this lively neighbourhood restaurant has a zero-waste ethos running throughout it, from using up scraps in their own composter to the uniforms made being from discarded bed linen. Small producers who share the Nolla philosophy provide ingredients for the hearty cooking, which is best enjoyed from the generous ‘Chef’s Choice’ menu. The dishes pack a punch flavour-wise, exemplified by a wonderfully intense, glossy meat reduction sauce to accompany tender roasted deer.
