971 Ossington Ave., Toronto, Canada

This warm and welcoming restaurant on a residential stretch of Ossington Avenue takes its name from Chef Justin Cournoyer’s hometown, where he grew up hunting and foraging – an influence evident in his cooking. The unscripted, ever-evolving seven-course tasting menu is dictated by close relationships with local purveyors, who supply peak seasonal organic produce, wild-caught seafood and responsibly raised animals. The dishes, some of which are delivered and explained by the chefs themselves, display a sense of Nordic understatement; the homemade sourdough, served with yeast butter and accompanied by assorted meats, is always a highlight. In warmer months, the restaurant’s own garden supplies herbs and edible flowers.
