The beautiful grounds of Schloss Schauenstein are home to OZ, another restaurant opened by Andreas Caminada. The name is derived from the Romansh word for "today" and refers to the contemporary cuisine served here. Entirely vegetarian, it is made with seasonal produce grown in the restaurant's own permaculture garden or sourced from long-standing partners. The ingredients are transformed into a creative nine-course set menu by head chef Simeon Nikolov. Meat-eaters won't miss meat here – the dishes are subtle, packed with flavour and balanced with delicate contrasts. A shining example: lightly sautéed local mushrooms, imbued with a wonderful roasted aroma, arranged on freshly baked puff pastry and garnished with deep-fried celeriac straw, served with aromatic mushroom foam. Diners sit at a U-shaped counter and watch the chefs in action – or strike up a conversation. Incidentally, a donation of two CHF, which goes to supporting young culinary talents, is included in the price of each set menu.

"The garden of Schauenstein Castle allows us the freedom to develop. Our purely vegetarian set menu is based on which of our over 800 home-grown plant species are in season. We create virtually no waste, do our own composting, and can change our menu daily. Our aim is to be growing 100% of our own produce."
