Makorè’s new gourmet venture offers guests a delightful dining experience where the focus is on vegetables, as well as fish from the adjacent fishmongers and local truffles (although the latter are not yet very well known, this alluvial land rich in biodiversity is the perfect habit for different truffle species). The chef and his team have gone back to the roots of the relationship between the Italian culinary traditions of the Este and Gonzaga families and Japanese influences, a relationship which is harmoniously demonstrated in the menu served here. The gastronomic “Missione Tensho” is inspired by the Jesuit expedition that left Nagasaki for Italy in 1582 with the aim of introducing the Japanese to Italian culture and vice versa – a mission which included a stop in Ferrara and which is now reflected in three new tasting menus that bring together influences from both countries. Last but not least, the superb cheese trolley boasts a fine selection of fresh and mature cheeses from Italy and further afield alike.
