In Italian, “noi” means “we”, a word that speaks of the importance of teamwork and the idea of a joint project. The chef here, who hails from Puglia (the region occupying the heel of the “boot” in the very south of Italy), proudly showcases a contemporary version of his homeland’s traditional cuisine, moving slightly away from the more commonplace Italian dishes and pizzas to offer a mouthwatering journey across the different regions of Italy. As an added bonus, its elegant, meticulous interior recreates the “Italian pop” style of the 1970s. Here, they normally use the “green” (verde) room for à la carte dining and the “Rioja” room for its set menus, which include one dedicated to Italian pasta (simply entitled Pasta), plus a tasting-style option (called From South to North).
